Tailgating Tuesdays: Porcupine Meatballs

This is a family recipe that has always been one of my favorites.  This recipe is called Porcuipine meatballs.  Relax.  No porcuipines are harmed to make these.  It is just hamburger meat and rice!

Ingredients:  2 lbs hamburger meat, beef rice-a-roni, 2 1/4 cup of water, 2 cans cream of mushroom soup

Over medium heat, heat water and vermicilli mix (the seasoning packet inside the beef rice-a-roni).  While that is heating to a boil, mix hamburger meat and rice together and form into golf ball size balls.  Once the water/seasoning is boiling, drop balls into the pan.  Brown on one side.  Turn them over and cover with both cans of cream of mushroom soup.  Cover and simmer for 20 minutes.  Enjoy!  We serve ours with mashed potatoes and use the sauce from the meatballs as gravy.
